Apple + Blue Cheese Farmers Market Salad

It’s spring, the season of rebirth and rejuvenation. The sun is out and it’s the perfect time of year for one of the best outdoor weekend activities: going to the farmers market. Grab a friend and make a day out of exploring, sampling and stocking up on all the tasty, seasonal bounty. With so many incredible produce and artisan vendors, you will quickly discover some favorites and surely become a loyal fan.

With so much to sample, don’t hesitate to try out something you may not be familiar with —  it may result in a pleasant surprise.

Today, I wish to share with you this delicious Parisian farmers market inspired salad using fresh pink lady apples, frisée, radicchio, blue cheese and a simple honey vinaigrette.

For the salad: 
1 Head of Frisée, pull apart
1 Head of Radicchio, pull off leaves
1/2 Apple, sliced thin
1/4 Cup Blue Cheese Crumbles
Optional: Walnuts

Directions:
Mix together in a bowl with salad dressing.

Salad Dressing Ingredients
1/2 cup Olive Oil
1/4 cup Apple Cider Vinegar
1/4 tsp Dijon Mustard
1 tbsp Honey
1/2 Clove Garlic, microplane grated
1/2 tsp kosher salt
1/4 tsp black pepper

Directions:
Place all the ingredients in a blender and pulse until emulsified. Now,  serve over your salad.
